The development and installation of a flue gas purification plant is considered to be trail-blazing for ecological flue gas treatment. It allowed the only large-scale smoking production facility in Kiel to continue producing the traditional smoked sprats known as “Kieler Sprotten” in the traditional manner.
A newly developed “D-Belt-Freezer” for use in deep-freeze production makes it possible to freeze even problematic products in relatively large installations for up to seven-day waiting periods without impairing the production hygiene and with distinct savings in costs. The experience gained with the first installation commissioned in 1996 at Elbtal Tiefkühlkost in Lommatzsch (Saxony) was extremely positive.
The two firms have developed the new Firmen “Radio-Frequency-Technology” for ham production together. In ham production heat is generated by electromagnetic heating, thus leading to improved heat introduction and hence distinctly shorter heating times. The process results in clear quality improvements in texture, colour and other value-determining properties, as well as in substantial savings in costs.
